During the game

Choose a mission. Park a damaged vehicle in the base where the mission is located, accept the contract, then immediately cancel it. Select 'No' at the 'Retry' menu. Your vehicle will be repaired with full ammunition at no cost.

Accept Gimme the Money mission

Now you can cancel the contract and still get the helicopter on the roof of the Mafia HQ or complete the mission and return the helicopter but as soon as you exit, jump straight back in so the mission finishes but you still have it.
